Easy Easter Bunny Cupcakes

Prep Time: 20 minutes

These easy bunny cupcakes with cones make a fun Easter treat for busy homeschool moms, turning leftovers into playful desserts kids will enjoy baking and eating together.

Ingredients

  • 6 Cupcakes (any flavor)
  • 10 Ounces White Buttercream
  • 6 Ice Cream Cone Cups
  • Shredded Coconuts
  • Jelly Beans
  • 9 Marshmallows
  • 2 Ounces of Green Melting Chocolate
  • 2 Ounces of Pink Melting Chocolate

Instructions

  1. Put the Shredded coconut in a ziplock bag and add two to three drops of green food color gel into the bag. Massage it until all the coconut is green.
  2. Put the green shredded coconut on a sheet of parchment to dry.
  3. Next place the green chocolate melts in a microwave-safe bowl, heat them in 30-second intervals, stirring in between until they are liquid and smooth.
  4. Dip each cone's top in the chocolate bowl and roll it around to cover part of the sides. Gently shake off the excess.
  5. Roll the dipped cone in the green shredded coconut to create a grass effect on the cone. Let them sit for 10 mins to dry.
  6. Pour the jelly beans into the dry cones and then take the cupcake out of the wrapper and place your cupcake on top of the ice cream cone. If your cupcake is too big for the cone, lightly squeeze it or slice it down so it will fit in.
  7. Use an ice cream scoop to scoop out the buttercream and place it on top of the cupcake. If the shape isn’t perfectly round, let the buttercream sit on the cupcakes for two minutes to crust and then mold the shape with your clean hands.
  8. Warm the pink chocolate melts following the same melting instructions as above. Then put it in a piping bag and cut a small hole in the tip.
  9. Cut the marshmallows in half, and use the pink melting chocolate to pipe one large circle at the top of the marshmallows. Then, three small circles at the lower end of the marshmallows will be used to make the bunny’s feet. Let them sit for three to five minutes to dry. Be sure to pipe only pipe the pink icing on the marshmallows that will be the feet.
  10. Now with the remaining marshmallow halves, roll each one into a ball. These will be used for the bunny’s tail.
  11. Use a tiny amount of the pink chocolate to attach the tails to the top of the cup cake and the bunny’s feet on the bottom edge of the cupcake. Let them sit for two to three minutes to dry.
  12. Enjoy!

Notes

These bunnies are best eaten fresh but can be stored in an airtight container in a cool, dry place for 2 days or in the fridge for 3-4 days. But take note: ondensation from the fridge may cause the cones to get soggy and/or break.

Do not let the buttercream hang over the cones because the bunny feet will slowly slip off that cone because of lack of support!

No jelly beans? No worries. You can fill the cones with different candy or try using a variety of candies to make it extra special.
